Low Glycemic Smoothie Bowl with Salad Power Green Juice

Summers back and that means one thing.

Smoothie bowls. For breakfast, lunch and dinner.

 

To me, a smoothie = a beverage. A smoothie bowl= complete meal. It’s amazing what a bowl and sprinkle of granola can do to your mental perception.

 

I’m all about making smoothies low-glycemic and that means opting out of fruit-juice, frozen yogurt and excess fruit and adding in healthy fats and protein. Eating adequate fats and protein turns off your hunger hormones, allowing you to be further satisfied with your meal.. and not crave a sugary-treat later on.

 

I’ve found this little hack- blending your smoothie with VEGGIE juice. Yes, it’s a real thing.

Now it would be uber time-consuming to wash, chop and juice veggies, clean the juicer, then transfer the juice to the blender to be blended in with the rest of the ingredients so I’m super excited that I found Salad Power. They are low-glycemic, high-nutrient juices that are the only ones on the shelves that have more VEGETABLES than fruit. A lot of other juice companies (not gonna name any names..) fill their juices up with low-cost, low-nutrient apple or orange juice, with a tiny bit of greens and label it green juice. Salad Power‘s primary ingredients are Kale, Carrot, Spinach, Celery, Cucumber, Tomato and Bell Pepper so it’s basically a salad in a bottle.

 

I used their pure veggie juice to make this bowl, which is the perfect choice for those trying to follow a low-glycemic diet (if you have digestive issues, a sluggish metabolism, yeast infection, energy crashes or sugar cravings, I recommend a low-glycemic diet.) The ingredients are: water, carrot, kale, spinach, tomato, celery, green bell pepper, cucumber and vitamin C. No chemicals, no stabilizers, nada. They also use a mild pasteurization process so it’s shelf stable (and you don’t have to spend a fortune on $11 cold-pressed green juices everyday.) If you’re someone who’s never home and finds themselves drinking sugary-drinks, make this quick and easy upgrade- it’s a game changer. It’s also a good replacement for many store-bought nut and coconut milks which contain carageenan, a toxic ingredient you do NOT want in your system. Read more about the risks of carageenan here.

 

This smoothie bowl was incredibly rich and creamy- I absolutely love replacing banana and other frozen fruits with frozen steamed cauliflower and avocado. It still tastes incredibly indulgent but has over 50g less sugar than if I had used the latter.
Frozen cauliflower provides it with bulk, like avocado provides it with creaminess.
The Salad Power veggie juice replaced the need for fresh greens, which is super convenient if you’re too busy to continually stock your fridge with fresh greens (I recommend EVERYONE bring this to Burning Man or any other festival/ camping trip.) It also replaced my usual spirulina.
I also amped it up with raw vegan protein powder to make it a complete meal, inclusive of all 3 macronutrients- protein, fats and carbs.
